Trying to plan a healthy family meal but you just do not seem to have the extra time? Try this super quick chicken fajitas recipe and you will have dinner on the table in about 10 minutes! You only need a few ingredients and then you are ready to go.
1 lb boneless skinless chicken breasts
1 green pepper
1 red pepper
1 yellow pepper
1 yellow onion
1 package of fajita or taco seasoning
Wash and slice all the veggies.
Place chicken breasts and veggies in the crock pot. Top with seasoning.
Cook on high for 2 hours. Stir mixture to mix up seasonings, chicken and veggies. Cook an additional hour. Serve with soft taco shells and toppings such as sour cream, guacamole, lettuce and tomato. This is delicious!
I was short on time and used frozen chicken. This made the mixture very watery. I would recommend either boiling the frozen chicken first or just planning ahead and letting them thaw before adding to the crock pot.
