My youngest daughter made these delicious sweet potatoes for Thanksgiving. They were so yummy! This recipe is from my mom’s kitchen and is turning into a wonderful tradition for us. There pictures were also all taken by my young daughter. She did great!! I hope you enjoy this recipe as much as we do.
3 cups mashed sweet potatoes (I just use a large can of yams or sweet potatoes and mash them)
3/4 cup sugar
1/2 cup melted butter
2 eggs, well beaten
1 tsp vanilla
1/2 tsp salt
1/3 cup canned milk
Topping:
1/2 cup packed brown sugar
1/4 cup flour
2 and 1/2 Tb melted butter
1/2 cup chopped pecans
Combine the mashed potatoes, 3/4 cup sugar, eggs, vanilla, salt and milk. Mix well and place into an 8 inch square glass dish. Mix the topping together and distribute evenly over the top of the potato mixture. Heat 20 to 30 minutes in the microwave on high (depending on the power of your microwave).
